Auntie Kathy’s Chili


MakeMy brother’s girlfriend, Rachel, swears by this chili recipe. Born and raised in the Boston area, this is her Aunt Kathy’s recipe. As the weather turns colder, get cozy on the couch with a hot bowl of this delicious chili, topped with fresh avocado, cheese and sour cream. Enjoy!


2 medium onions, chopped
3-4 cloves garlic
1 lb. ground beef  (you could also use ground turkey)
1 large can crushed tomatoes
1/2 small can whole San Marzano tomatoes, squished
1 large can water
1 Tbs. chili powder
1-2 tsp. cumin (plus additional if you are using turkey)
1/2 tsp basil
1/2 tsp parsley
3 bay leaves
salt and pepper to taste
A few splashes of Tabasco sauce
2 beef bouillon cubes
1 can red kidney beans with juice
1 bag frozen corn
1 large green pepper
1 large red pepper
1-2 carrots sliced thin


How to:

  • Chop veggies.
  • Saute onion and garlic in olive oil until soft.
  • Add beef and brown it. (If using ground turkey, add additional cumin to the meat at this point.)
  • Add tomatoes, water, spices, Tabasco and bouillon, and bring to a boil. Add vegetables, boil and simmer, at least 2 hours, stirring occasionally.
  • Serve with shredded cheese, sour cream, avocado chunks and Frito Scoops.
