Since we all just love babies (I’ve had three of my own!), I thought I’d share one of my favorite baby food recipes, White Bean, Sweet Potato & Carrot Puree. It’s the perfect veggie blend for babies from about 9 months and up. I hope your little ones enjoy it as much as mine do!

1 can (15 oz.) cannellini beans, rinsed and drained

1 medium sweet potato, peeled and cut in half

2 medium carrots, peeled

3 Tbsp. unsweetened apple sauce

1 Tsp. pure maple syrup

1 Tbsp. packed light brown sugar

2 Tbsp. melted butter


How to:

In a medium pot, boil the sweet potato and carrots. When the vegetables are soft (test them with a fork; if the fork inserted in the vegetables goes in and out easily, they are done), remove from the water and set in dish. Discard the water in the pot.

Return the vegetables to the pot. Add the rest of the ingredients. Using a potato masher, mash the ingredients together until just combined.

Spoon the mixture into a food processor or blender (you could also use a hand-held immersion blender). Pulse the mixture until it’s smooth. If you want some small bits of vegetables for texture (for an older baby or toddler), do not pulse as long.

When you have reached the desired consistency, spoon into a bowl and serve. This makes a large amount of food. Keep in an airtight container in the refrigerator for up to a week. This makes it easy to spoon out a little each day. Warm through in the microwave, stirring well to ensure there are not ‘hot spots.’
